Happy Monday everyone! I know – it’s the least favorite day of the week, but it’s a great excuse for lots of coffee, right? Actually I’m still pretty tired from Game of Thrones last night. Ned Stark, am I right?
But I should get my mind back to reality and Monday. As much as I dislike the first day of the work week and as much as I love to whine about it, I always like to remind myself that it’s a good time to make productive and possibly healthy plans for the week. Monday is essentially a reset button for weekly goals and a pep talk with my belly.
Between my strong ambition to get back into shape, starting a brand new job and career, and just life in general, finding time to enjoy healthy eating can be tough. If you follow us on Instagram, you would have noticed that I’ve developed a huge obsession with avocado toasts. And in my defense, avocado toasts are never a bad thing to get into. They are just so buttery and creamy and nutty. Swoon.
Since they are such a classic and so easy to make, I’m going to give you three variations because you can never have too many avocado toasts. I created these with the concept of an avocado toast sampler to be shared with my favorite group of people. All three recipes are incredibly easy to make and adaptable with different ingredients. There is never a wrong way to make them as long as you’ve got a ripe green fruit and a piece of toast.
So go forth and try these, or make your own versions of deliciousness.

Avocado Toast – Three Ways

Serves 3-4
Miso Avocado Toast with Nori
1 slice of toast
Half an avocado
1/4 teaspoon miso paste
1 radish, thinly sliced
Half scallion, finely chopped
Nori strips
Salt and pepper
Sesame seeds
Curry Avocado Toast with Pepitas
1 slice of toast
Half an avocado
1/4 teaspoon curry powder
1 teaspoon coconut oil
Salt and pepper
Pepitas
Avocado Toast with Ramps
1 slice of toast
Half an avocado
1 teaspoon olive oil
3-4 ramps, cleaned and chopped into 2″ pieces
Salt and pepper
Chili flakes
Miso Avocado Toast with Nori
Mash avocado with miso paste combined – taste for flavor and add more miso paste if desired. Spread avocado evenly onto toast, add radish slices and chopped scallions. Top off with nori strips, salt and pepper, and a sprinkle of sesame seeds.
Curry Avocado Toast with Pepitas
In a pan over medium heat, heat curry powder in coconut oil for 2-3 minutes. Be careful not to let it burn – I did this the first time and had to start over. Once you can smell the fragrant curry coconut oil throughout the air, combine with the avocado and mash together. Evenly distribute the curry avocado spread onto toast. Season with salt and pepper and finish with pepitas.
Avocado Toast with Ramps
Heat a pan on medium heat and add olive oil. Add ramps and sauté for 3-4 minutes, or until soft and remove from heat. Mash the avocado and spread onto toast. Place sautéed ramps on top and season with salt and pepper. Sprinkle chili flakes on top for a little heat.
That’s it, guys. Serve these immediately and if you are having a party with these, you can accompany these beautiful avocado toasts with additional toppings and seasonings.
