Guys, I’m back with more cheese but I think you will be pleased. To start this cheesy story, we must go back in time to when I lived in London five years ago. While I was studying abroad, I discovered the savory goodness of the avocado. I know what you’re thinking: this girl must be out of her mind!

It’s true –  I didn’t know any better growing up and I always thought avocado was a bland tasting fruit that people needed to stop raving about, not unlike kale. But I love kale now.

So back to the story across the pond. While I was studying abroad in London, I was lucky enough to be able to travel around Europe a bit. When my friends and I visited the tropical Canary Islands, my friends once again offered me some avocado slices, but this time dressed with lime and some seasoning.

It was divine. How could I have been so blind?

From that moment on, I’ve loved avocado as much as I love Earl Grey. Once I was back in London, I started playing around with this fatty fruit. I’m not sure how it happened, but one day I had the ingredients for guacamole but decided not to make it. Instead, the ingredients went into a grilled gouda cheese sandwich.

Things have never been the same since, and I am a better woman for it.

P.S. If you like cilantro, go for it. I’m on the side that strongly dislikes the taste.

Deconstructed Guac Grilled Cheese

Half an avocado, sliced
Lime slice
Salt and pepper
2 bread slices
Butter
Gouda, 4-5 slices, or enough to cover both sides of sandwich
Tomato slices
Onion slices

After slicing the avocados, dress them up with with a squeeze of lime, salt, and pepper.

Next, in a skillet over medium low heat, butter each piece of bread and lay them on the warm skillet. Warm each side up for about 2 minutes, or until the butter has seeped into the bread. Now lay the cheese slices evenly on both sides of the bread and let them warm up until they start to look a little sweaty. If you can, loosely cover the skillet to speed up the process.

Spread the avocado slices evenly on one side of the sandwich, then the tomatoes and the onions. Season gently with salt and pepper. Close the sandwich and continue to grill each side until the bread is brown and cheese is melted – this will take approximately 7-10 minutes. Be patient.

Once everything is melted and gooey, transfer to a plate and enjoy this wonderful creation.

    I love this recipe, however, I just wanted to know what kind of bread did you use in your pictures? The sandwich looks amazing and I can’t to introduce this to my family. Thanks for sharing this recipe and your story.

    I made this tonight and it’s quite good. The only issue I had, however, was in keeping the contents of the sandwich in between the two slices of bread. Doesn’t matter if you flip it in the pan or are trying to eat it once it’s out of the pan – the contents come out all over the place.
