I know I’m not the first (or even the hundredth) to recreate the Levain Bakery chocolate chip cookies. But, I have been making cookies for a long time. My mom’s been baking cookies for a long time. And I’m sorry, but her cookies are better than Levain’s.

After last night’s election, I’m left speechless.
I wouldn’t babble on about my feelings even if I could, as I’m sure you have your own strong opinions about last night’s events. But what I will do is offer you a cookie. So pull up a chair, grab a fudgy gluten free cookie, and finally take a break from all the election drama with which we’ve been bombarded every day for the last few months. It’s over. Friends, I think I may have just fallen in love this year on Valentine’s Day. That’s right, I’m in love. I have fallen in love with the beautiful craft of baking. Especially cookies.
About a year ago, Leili gave me a cookie mix created by the amazing Ashley Rodriguez and from there I baked my first batch of perfect cookies. For months, I kept the empty container so I could read the ingredients and set out on my own to create my perfect cookies. I’ve concocted several recipes since that time and have had wonderful feedback, but I’m still chasing after more perfect cookies. Who doesn’t love a good cookie to sweeten up their day? (more…)
Occasionally, a rainy afternoon will make its way into my very warm summer. On those days, I want nothing more than to stay in and inevitably develop a sweet tooth born out of boredom and laziness. I don’t like to be bitter about it.
I usually end up at work though, and I have to carry my sweet tooth with me. Most days, I’m not picky as long as it fills my sugar hunger, but sometimes I need a really special cookie to do the job. This, my chocolate toffee cookie, is it – I think this might be my cookie soul mate. It’s one of those cookie recipes that I never mind repeating, because it tastes so damn good. (more…)
It’s about time, guys.
I’ve been itching to share this recipe with all of you since the birth of this blog last year, but posting a recipe that’s been years in the making is like watching your baby head off to school for the first day of kindergarten. It’s so hard to let go. After years of effort, I can only hope it does well out there. It’s close to my heart, so naturally I want it to succeed. But no matter what happens, I will always love it.
Too melodramatic considering I’m talking about cookies? Let me explain. It all started back in 2012 when I stopped eating gluten, dairy, soy, and all processed food for a couple months…right before I started working at a bakery.

If you’ve read our About page, you would know that Leili and I met while working at a bakery in Boston. Allow me to garnish with extra information on our delicious friendship. Leili worked back of house as a baker while I worked front of house – we quickly became friends by talking about boys and her occasionally sneaking me sweets.
Between the two of us, Leili is the sweets and I am the salty. I have always been intimidated by baking but slowly unlearning that fear. This all changed very recently when Leili got me the Not Without Salt Cookie Mix by the great Ashley Rodriguez for Christmas.
Since I started cooking and baking, I’ve been all about the marriage of sweet and salty in a single, perfect bite. And there’s a reason sweet and salty go so well together: science. It’s just how our taste buds were built.
I know I’m late to the whole sweet and savory game with these cookies, but that actually makes me really happy. It means that now I can look for any recipe for salted cookies and get pages of results to choose from. I’m not alone in the corner putting salt in my sweets anymore (or sweets in my salties), and that’s pretty damn cool.
These cookies are big, so they’re soft in the middle and slightly chewy around the edges. In addition to the salted pistachios, white chocolate chunks and dark chocolate discs, we’re also throwing in a hint of orange zest. You can barely taste it and it really rounds out the flavors, but you can also easily leave it out. (more…)
