    January is halfway over. Isn’t that crazy? For me, the first month is always a bit confusing – we’ve eaten all these cookies and other feasts around the holidays and we’re expected to just go clean come the New Year. To add to that, it’s also the coldest month of the year. I try to eat healthy generally, but the wintry skies gently nudge me to stay at home and splurge on a hearty meal.     In the midst of planning my family’s Thanksgiving dinner, I got a bit carried away into marshmallow heaven and realized I’d forgotten to add some fiber to the dinner. Perhaps you guys are having this issue as well. This recipe is a quick but delicious attempt to fix that problem.

In my defense, I scare really easily (ask Leili) and I have zero enthusiasm for dressing up in a costume. My idea of dressing up is wearing dark colors and making up my face. This lifestyle is encouraged by my sweatpants and YouTube makeup videos.
